This festive season I am sharing my mastered banana bread recipe. Whenever I have extra ripened bananas this is how they transform. This recipe is actually a piece of cake.😉
It is not your average banana bread recipe. The ingredients makes it special. Whole-wheat, vegan and super tasty. It is a perfect blend of spices with apt sweetness. And can be made in a jiffy.
I adapted this recipe from one of the recipes printed in cooking magazines. Since then I have stick to it. I could not do a video for it as I am still learning the techniques. Cooking and video shooting does need some expertise which I am yet to adapt.
Try this recipe of vegan banana bread this festive season.
Ripe Bananas, medium- 4
Whole Wheat Flour- 1.5 cup
Brown Sugar- Half a Cup (If using sweetner use half the quantity i.e. less than 1/4th cup)
Vegetable Oil- Half a Cup
Vanilla Extract- 1 tsp
Baking Powder- 1.5 tsp
Baking Soda- 1/2 tsp
Cinnamon Powder- 1/4th tsp
Nutmeg Powder- 1/4th tsp
Sunflower Seeds- 2 Tbsp
Salt- a pinch
Puree bananas or mash them in a mixing bowl. Add sugar, vanilla and oil to bananas and mix well. Now add all the dry ingredients except sunflower seeds and fold nicely. Once mixed add in the sunflower seeds and lightly stir it. Grease a 7×4.5×2 inch pan with oil. Pour the bread mix in the pan and tap 2-3 times so that no air is trapped.
Bake it at 355F or 180C for 30-40 mins. Keep checking after 20 mins with a toothpick at the center. If toothpick comes out clean, it’s done!
Once baked let it cool completely then only remove from the pan. Slice and enjoy!
- You can add any nuts walnuts are best, I just happen to have lot of sunflower seeds in stock!!
- If using ghee or butter bread will be stiff if in refrigerator. Please warm it in microwave for 30 sec before serving.
