Hi everyone,
Today I am introducing you to a very healthy Quinoa Salad. It’s a meal in itself. This salad has everything you need in a balanced meal.
Quinoa is an ancient grain. It is a pseudo-cereal and looks like Amaranth. It is gluten free and has great nutritional benefits.
For this recipe I have used tri-color quinoa.

Ingredients:
Cooked Tri-color Quinoa – 2 cups
Boiled Chickpeas- 1 cup
Chopped Celery Stalk- Half a cup
Cucumber – 1 cup
Diced Carrot- 1/4 cup
Chopped Onions- 1/4 cup
Chopped Tomato- 1/4 cup
Chopped Garlic- 1 tsp
Chopped Coriander Leaves- 1 Tbsp
Salt- 1 tsp
Juice of 1 Lime
Extra Virgin Olive Oil- 1 tsp
Cumin Powder – 1/4 tsp
Apple Cider Vinegar – 1 tsp
Freshly milled Black Peppr – 1/4th tsp
Method:
In a mixing bowl, add all the above listed ingredients. Mix well and serve!

Tips:
- You can add any vegetable you like to eat raw.
- Instead of chickpea, Mung bean Sprouts would also taste good.
