Oven Roasted Purple Cauliflower

Have you seen purple cauliflower, yet? It is so beautiful. Honestly I like everything that is purple💜. I never saw purple cauliflower in India, it was when I moved to Vancouver (Canada) I got familiar with tons of variety of veggies and fruits. I got fascinated by different variety of fresh produce available here. For me it is therapy to visit farmer’s market. 

Purple Cauliflower is no dyed or painted. The beautiful purple hue is due to natural pigment anthocyanin that gives also color to grapes, red cabbage and eggplant.

It is nutty and slightly sweet in taste. It has crumbly florets. 

You can find this in local farmers market, whole foods or sprouts. 

Always be open to new things. Change is good 🙂

Here is the recipe –

Ingredients 

Purple Cauliflower- 1 

Olive Oil- 1 Tbsp

Garlic, Crushed- 5-6 cloves

Salt- As per taste

Black Pepper, Crushed- 1/4th tsp

Lime Juice- 1-2 tsp

Directions

Preheat the oven at 400 F. Cut the cauliflower in equal sized florets. Rinse with water. Pat them dry with paper napkin. Cover the baking tray with aluminium foil or parchment paper. Put the cauliflower on tray and add all the ingredients (except lime juice). Mix them all well. Make sure all the florets are coated with the oil and salt. Spread the florets on tray. Bake for 15-20 mins in oven until the flat stems turn little brown. Cook time may vary depending on floret sizes. Serve warm garnished with lime juice 🙂

  1. You can bake broccoli, cauliflower same ways. 
  2. Use this in salad, wraps or in soups.
